Soil composition The soil found in Greve at an altitude of 325 m is composed of disintegrated turbidite sandstone and marly schist with claylike features. Slate and sandstone are most prevalent in the hilltop area (450 m.), where the soil is loose and conducive to drainage, as is also the case with the Radda vineyards. Rocky, calcium carbonate rich soils characterize the Gaiole vineyards.
Yield per hectare 35 hl/ha
Harvest The grapes are picked by hand using 9-kilo crates. Harvest dates: September 9-30.
Vinification In the cellar they undergo fermentation in 3-ton French oak casks.
Ageing After malolactic fermentation, élevage is carried out in barrique (also French) for 16-20 months, 20% new. No animal products or byproducts are used in the production of this wine, making it suitable for vegans and vegetarians.
