||Dolcetto is a historic wine from Piedmont’s long-established winemaking traditions. Aging occurs in steel vats in order to bring out the full expression of aromas and flavors characteristic of this grape variety.
|Composition of the land
||Vineyards in the townships of Barbaresco, Treiso, Alba e Monforte d’Alba with soils created by powerful marine currents during the Miocene epoch, mixed in composition with both sand and clay.
||Grapes were brought to the cellar for destemming and crushing.
||27 - 28 °C (80 - 82 ° Fahrenheit)
||Grapes were left to macerate on the skins for 7 days at a maximum temperature of 27–28 °C (81-82 °F). Malolactic fermentation was completed by mid December.
||In stainless steel tanks for several months. Dolcetto was bottled in spring.
||Can be drunk during an entire meal from hors d’oeuvres to cheese.
