|Composition of the land
||Lands of the Tortonian period (Marne di S.Agata fossili). Compact limestone clays alternated with sandy layers.
||The bunches are healthy, with an excellent concentration of sugars, acids and aromas. The grapes harvested in baskets were softly pressed and the clear must was separated by cold decanting. The fermentation of the latter took place at a temperature no higher than 18 °C for about 15 days.
||Before bottling, the wine was aged in stainless steel tanks at a low temperature for a few months.
||It goes very well with all fish dishes and appetizers.
