Vinification The bunches are healthy, with an excellent concentration of sugars, acids and aromas. The grapes harvested in baskets are softly pressed. The clear must is separated by cold settling, and its fermentation occurs at a temperature not above 18°C for about 15 days.
Ageing Before bottling, the wine is aged in stainless steel tanks at a low temperature for a few months.
