Vinification |
The grapes are processed in a very short cold maceration for about 8 hours, to obtain the ideal pink nuance for the fermentation phase, at a temperature of 16 degrees for about 10 days. |
Ageing |
In steel tanks, the maturation is completed by a period of 3 months in bottle. |
Pairing |
It pairs well with a wide variety of dishes, such as barbecued eel with currant reduction, breaded fillets of perch, gnocchi with lake shrimps, sliced duck breast or culatello. |
