||95% Chardonnay, 5% Erbamat
||The grapes are processed in the press, with soft squeezing to obtain the must flower, followed by alcoholic fermentation in steel with subsequent aging of about 4 months.
||In the spring following the harvest, the "draught" will proceed, with the bottling of the base wine with the addition of "liqueur de tirage" for refermentation in the bottle. After 36 months of contact with the yeasts, disgorgement and final corking will take place, followed by a further period of "elevage" for about 6 months before release on the market.
||It is a bubbly that accompanies the whole meal, either with meat or sh and shellsh, oysters, clams and fresh sh of the sea and lake. Do not disdain strong dishes such as meat sauce, mushrooms, strong-flavoured sauces (puttanesca, matriciana, carbonara, etc.). Couples happily with summer pastas, rice salads, sandwiches, wraps, pizza, bread, garlic bread or breakfast fleeting and fast.
