||The grapes are destemmed and pres- sed softly. Fermentation is carried out at 18 °C in large 15 - 20 hl casks made of Allier oak.
||The wine is then left in casks to mature.
||Perfect with shellfish and fish dishes such as prawns and red tuna as well as quiche and fresh pasta dishes. Ideal served with white meats and traditional deli meats such as soppressa veneta as well as smoked ham such as San Daniele and Sauris. It also marries well with cow's milk or goat's cheese that is medium aged such as Robiola di Roccaverano or Monte Veronese.
