Harvest	Manual, selection of the best bunches. The smaller bunches are dried until mid-November on special racks, while the larger bunches are hung one by one.
Vinification	Ginning of the dried bunches with selection of the best grapes. Spontaneous fermentation and maceration on the skins for 28 days.
Ageing	In cherry wood barriques for about 1 year. Then decanted into stainless steel containers where it decays to the right clarity and then bottled.
