Soil composition |
Faedo is located between the Permian formation of the porphyritic platform (volcanic rock) and the Werfenian deposits of sandstones, siltstones, marls, limestones and dolomites. The soil is variable in depth from 30 to 100 cm, is of a silty-calcareous type and rests on a marly conglomerate. Valbona, on the other hand, was shaped in ancient times by retreating glaciers and later by the work of the Scorzai stream. Excavation of the porphyritic rock (volcanic origin) produced dark brown sandy soils, rich in skeleton (rounded pebbles). |

Vinification |
Fermentation and ageing in small oak barrels in contact with its own yeast with the effect of the "hourglass", the wine is stirred weekly. |
Ageing |
Secondary fermentation in the bottle is carried out in Spring using base wines from 2 different years and 2 different varieties. Disgorgement takes place after no less than 36 months on the lees. |
Pairing |
Considering its character, not dosed and rather mature, it can be considered a sparkling wine for the whole meal. |
