Vinification |
The grapes picked in the coolest hours of the day are pressed softly. The must is transferred into thermo-conditioned tanks where it immediately begins the “settling” phase. After a few days, a very long fermentation starts at controlled temperature, which is constantly increased until the end of the process. Once fermentation is finished, the wine undergoes “batonnage” until shortly before bottling. |
