Vinification |
Sangiovese grapes are grown following biodynamic practices. Vinified as a single Cru in a 110 quintal French oak vat specially designed for Vigna Anfiteatro, the must macerates on the skins for 32 days, followed by spontaneous malolactic fermentation. |
Ageing |
Maturation in French oak barrels for 20 - 24 months. Spontaneous malolactic fermentation, followed by a minimum of 24 months in the bottle. |
