Vinification |
After crushing, fermentation in stainless steel at a controlled temperature of between 28 and 30 °C for a duration of 10/12 days, until fermentation is complete, frequent pumping over and subsequent malolactic fermentation, transfer to oak barrels for ageing. |
Ageing |
16/18 months in large Slavonian oak casks of 25 hectolitres. |
Pairing |
Superb with game, braised beef and the great meat dishes of the Piedmontese tradition. Excellent with white Alba truffle dishes such as cardoon pie with fondue and game ravioli. |
