Harvest By hand, with small crates.
Vinification After a soft pressing, the grape undergoes a long maceration. The alcoholic fermentation starts spontaneously with its indigenous yeasts without using sulfites.
Ageing In small oak barrels for a minimum of 18 months in contact with its indigenous yeasts, in the bottle at a controlled temperature of 15°C.
