Vinification Maceration of varying duration and alcoholic fermentation occur at a controlled temperature in stainless steel. Malolactic fermentation then takes place in barriques.
Ageing 12 months of ageing in French oak barriques and 12 months in larger barrels also made of French oak. After blending in stainless steel tanks, the Barolo is bottled 6/7 months before marketing.
