Paladin Pralis 2023

Pralis is a refined blend of Sauvignon and Chardonnay grapes. After carefully harvesting the grapes, fermentation occurs at a controlled and low temperature of around 13-14°C. After gentle pressure, the wine matures for 5 months on its noble lees in a stainless steel tank.

Colour

Straw yellow with golden reflections.

Bouquet

Delicate white peach aromas from the Chardonnay and strong floral and citrus notes from the Sauvignon.

Flavour

The opening is enveloping, and the excellent tastiness supports the slight sweetness due to the over-ripening of the Sauvignon grapes.

Pairing

It is definitely an apéritif wine, excellent with blue cheese. It goes well with delicate risottos and meatballs with herbs and turmeric.

Harvest	This wine is composed of two international grape varieties, Chardonnay and Sauvignon, cultivated with different objectives and techniques: Chardonnay comes from chiller areas and is harvested when perfectly ripe. The Sauvignon comes from sunnier vineyards.
Vinification	After the harvest, the two varieties are vinified separately: the Chardonnay undergoes a slow fermentation at low temperatures to enhance its mineral notes and freshness.
Ageing	After alcoholic fermentation, the Sauvignon follows maturation on the lees in temperature-controlled stainless steel tanks.
