Harvest	Third decade of September.
Vinification	Grapes are selected in the vineyard. Fermentation and maceration last for about 10 days in stainless-steel vats, followed by malolactic fermentation in November.
Ageing	The wine is aged 40% in 50-hl French oak barrels and 60% in small 225-litre barrels for 18 months. The blending occurs in spring, whereas the bottling in summer.
