||Manual harvesting in boxes in the second half of October, destemming and crushing of the grapes.
||Fermentation and maceration at a controlled temperature for 10 days. Extraction by pumping over, drawing off, soft pressing and separation of the fecund wine.
||After malolactic fermentation and subsequent natural limitation, the wine is transferred to barriques for 6 months. At the passage in wood there is a pause in steel tanks and bottling for a further phase of evolution in the bottle.
||Red meats and strong dishes of the Samnite tradition such as black pig cheek matriciana and lamb stew.
