Harvest Second decade of September.
Vinification Selection of the grapes begins in the second half of September and is completed at the end of the month. The grapes dry naturally in boxes where they loose between 30 and 35% of their weight. Grapes are vinified in January in a temperature-controlled vinifier with prolonged maceration for 16 days.
Ageing After a period in steel containers, the wine is transferred to 32 and 52 hl French oak barrels for 30 months.
