||Soils composed of volcanic sands, derived from the disintegration of lava masses, very rich in minerals, located on the south-eastern side of Etna.
||By hand in boxes, between the second and third week of October.
||Maceration: cold for 24 hours (cryomaceration). Fermentation: in stainless steel tanks for about 10-15 days at a controlled temperature of 22-24 °C.
||Mainly in steel, the wine ages 3-4 months in tonneaux and another 5-6 months in bottle.
||Excellent with cold cuts and semi-seasoned cheeses, tasty first courses, roast and grilled meats.
