Vinification |
The carefully selected grapes are macerated for 24 hours at a low temperature, followed by soft pressing and static settling. The juice thus obtained is fermented at a controlled temperature. The resulting wine is poured into hermetically sealed tanks, where, thanks to the addition of selected yeasts, a second fermentation takes place, giving the wine its delicate perlage. |

Exclusively in stainless steel tanks. |
Pairing |
Ideal as an aperitif, it is also great at the table paired with fresh cheeses, grilled or tempura vegetables, savoury pies, spring salads and pureed peas, fresh fava beans or other legumes. It is also ideal with the typical Sicilian 'panelle', made from chickpea flour. |
