Nicosia Bio Vegan Grillo Perlage
Fresh and lively: a lightly sparkling wine produced with organically grown grapes of Grillo, one of the finest native white grape variety in Sicily. Certified Bio Vegan, this wine is ideal as an aperitif, but it is also a good partner for vegetarian dishes and many specialties of Mediterranean cousine.

Fresh with notes of white-fleshed fruit, pineapple and nettles.

Flavour

Dry and well-balanced with a marked tastiness and a great freshness, which is enhanced by the delicate perlage.

Pairing

Ideal as an aperitif, it is also great at the table paired with fresh cheeses, grilled or tempura vegetables, savoury pies, spring salads and pureed peas, fresh fava beans or other legumes. It is also ideal with the typical Sicilian 'panelle', made from chickpea flour.

Vinification The carefully selected grapes are macerated for 24 hours at a low temperature, followed by soft pressing and static settling. The juice thus obtained is fermented at a controlled temperature. The resulting wine is poured into hermetically sealed tanks, where, thanks to the addition of selected yeasts, a second fermentation takes place, giving the wine its delicate perlage.
Ageing Exclusively in stainless steel tanks.
