The soil is a 150-metre-deep alluvial cone, carved by the Sirmian stream and the Nals brook and consisting of 70% limestone gravel and 30% porphyry debris. |
| Harvest |
The grapes are harvested by hand. |
| Vinification |
After a short pre-fermentation maceration, the clarified must ferments for about 3 weeks in 12 to 30 hl wooden barrels. |
| Ageing |
The new wine then matures for a further 8 months on the fine lees. |
