Soil composition Hilly, consisting of stratified marls and sandstones of Eocene origin.
Cultivation system Double Guyot.
Yield per hectare 6,000-6,500 kg/hectare.
Harvest By hand, by the third decade of September.
Fermentation temperature 16-18 °C
Fermentation period 8-10 days.
Vinification Destemming of the grapes and subsequent skin maceration for 12 hours at a temperature of 15°C. Soft pressing and cleaning by static decantation of the must obtained. Alcoholic fermentation for 8-10 days at a controlled temperature of 16-18°C.
Ageing On the noble lees in steel tanks with bâtonnage for at least 3 months.
Allergens Contains sulphites
Pairing Ideal as an apéritif. It pairs well with soups, risotto and even fatty fish.
