||Maceration: 25 hours. 20% vinified in oak barrels and 80% in small vats. Natural alcoholic fermentation (natural yeasts). Malolactic fermentation to limit the addition of sulphur. No filtration, no collage.
||On fine or coarse lees for 6 months in barrels or vats. Aged on racks in our cellars: 28 months on average. Aged in our cellars after disgorgement: 6 months on average.
