Cà del Magro, a very old vines of more than 40 years and about 7 acres, located on the beautiful hills of Custoza, a small village in the municipality of Sommacampagna located southeast of Lake Garda. |

100/150 meters s.l.m. Hill moraine with soil and then limestone, clay, gravel and sand. |
Cultivation system |
Part of the vineyard with old vines native plants grown prestigious Veronese pergola with low yield of about 2 kg per vine. The remaining area is Guyot with Garganega, selected clones and multiplied by historians. |
Vinification |
Cold maceration, pressing. To the juice of a portion of Garganega grapes, about 4% -5% of the entire game, fermentation and aging "sur lies" in small oak barrels for a period of about 4 months old. The rest of the production is fermented in steel vats, mind slow, controlled temperature and in contact with its lees until May. Then follows the bottling, which matures for at least 6 months before being put on sale. |
Pairing |
Oysters, sushi, sashimi and all raw fish. Also interesting is the combination with white and red meats. Great with duck glazed the union. |
