||85% Moscato Bianco, 15% Clairette
||Clairette de Die Tradition is produced according to a specific process named the « Méthode Dioise Ancestrale ». The grapes are destemmed and crushed as soon as they arrive in the winepress, then juices are selected and stored in refrigerated vats. This is the beginning of a very slow fermentation due to the combined effect of yeasts naturally present on the grapes and the very low temperature (0-10 °C). Then, half-fermented juices are bottled, the sparkling process and fermentation of the natural sugars contained in the juice continue until it reaches 8% vol. (with no drawing liquid added).
||Ideal as an aperitif, original with a foie gras, it is also perfect with frozen desserts, chocolate cake, or fruit tarts.
