||Côtes, Hautes Côtes de Beaune et Nuits, Côte Chalonnaise
||Various soils: limestone and marl in the Côtes de Nuits, Beaune and Côte Chalonnaise and granite in the south of Burgundy.
||Traditional method. The grapes are crushed as soon as they arrive and placed in pneumatic presses. Alcoholic fermentation takes place in temperature-controlled stainless steel vats at 18 °C. They then undergo a second fermentation in the bottle and are aged for a minimum of 12 months ("Sur Latte") before being placed in gyro-palettes and disgorged to remove the yeast deposit in the neck of the bottle.
||Ideal as an aperitif, it can also accompany a meal (poultry or seafood in sauce) or highlight the aromas of fruit-based desserts (sorbets) or petits fours.
