||The vintage is conducted in the last week of September.
||The hand-picked clusters are quickly transported to the cellar where they are dirasped, pressed and left to macerate in the must for twelve hours. This is then pressed sofficiously and the seedlings started with alcoholic fermentation at controlled temperature in stainless steel tanks.
||Once the winemaking is over, Costarenas continues to mature in steel for five months on the rind of its own yeast and is subjected to repeated batonnage. Finally, bottled, refined in glass for one month before placing it on the market.
||It gives the best of itself to the table when combined with the great seafood dishes and the most refined fish starters. We could recommend it with the pâté of mullet and bottarga, or with the grouping of mediterranean crust, enriched with cherry tomatoes, olives and ethnic oregano.
