Climate Winter temperatures are favourable to the rest of the plant. The budding was generous and uniform in spring, with adequate rainfall and optimum temperature. The summer has seen average temperatures, with cool nights typical of the Cordillera. Beneficial rains have delayed a little late-season ripening of the grapes and encouraged a good balance between sugar and phenolic ripeness.
Soil composition Sandy loam, with the presence of stones, good content of organic substances and minerals.
Harvest The second week of February with the Pinot Grigio. The Torrontés is collected between late March and early April.
Fermentation temperature 15-17 °C
Vinification The grapes for this wine are Torrontés and Pinot Gris. The Pinot Gris is harvested at the end of February in the morning when the air temperature does not exceed 20°C. The grapes are pressed and the must is chilled at 5°C. After 20 hours of settling, the racked must is inoculated with selected yeast, and the fermentation occurs in stainless steel at temperatures between 15 and 17°C with micro-oxigenation. The Torrontés, a late variety, is destemmed and chilled at 5°C allowing a cold maceration for 20 hours. It continues the fermentation temperature between 15 and 17°C with micro-oxigenation.
Ageing 6 months in stainless steel containers and resting for at least 45 days in the bottle.
