The successful marriage of the freshness of Pinot Grigio and the warm aromatic qualities of semi-dried Verduzzo grapes, so appealing in the Masianco wine, can now be found as a sparkling wine. Moxxé is the first sparkling wine to be made with a touch of grape drying. Attractive and subtle, sparkling and lively too, this is a unique version of an important Venetian winemaking style, thanks to Masi's Expertise Appaxximento.

History The technique of sparkling wine making in autoclave has been known in Veneto since the end of the 1700s. Masi applies it to two native grape varieties to obtain a delicate sparkling wine of remarkable pleasure, which combines fresh notes and acidity typical of Pinot Grigio with ripe fruit aromas expressed by semi-dried Verduzzo.
Origin Gargagnago di Valpolicella (Verona).
Harvest Separate harvesting and vinification by variety. The Pinot Grigio is harvested at the end of August. The Verduzzo is harvested at the end of September and undergoes over-ripening for 3 weeks. This process is favoured by the varietal characteristics and aims to obtain a higher fruit concentration.
Vinification The Pinot Grigio is vinified after the harvest at low temperatures between 10° and 15°C for 25 days to enhance its freshness and aromas. Verduzzo, after a short cryomaceration for 36 hours at 5°C, continues fermentation in steel.
Ageing Fermentative stop before the end to allow the next blend and second fermentation with the Charmat method with 1 month of stay on the yeasts.
