||The grapes are immediately processed and the fermentation is carried out exclusively in steel at controlled temperature.
||The wine remains for at least 8 months on its yeasts, which give it complexity before being bottled. Afterwards it remains for at least 36 months in aging. Finally, after disgorging, it rests for another 6 months in the silence of the cellars.
