Soil composition |
Predominantly calcareous siliceous soils, particularly rich in quartz sands and clays mixed with fine thin and friable sandstone. These soils provide an abundance of trace elements ensuring an immediate expression of the bouquet. The Arneis grape finds the ideal conditions for the expression of fresh and fragrant smells. |
Vinification |
Grapes are collected exclusively by hand and quickly brought to the wine factory for destemming and soft crushing to extract only the first must and aromatic fractions from the peel and the outer area of the grape. The must thus obtained is immediately separated and placed in stainless steel vats at a temperature of 20°C. |
Ageing |
In stainless steel tanks or cement tanks to preserve the freshness and typical fragrant aromas. The long stay on the lees makes this long-lived wine, able to evolve after uncorking and still in the glass. |
Pairing |
Fine appetizers but with intense flavours like veal with tuna sauce, the sufflè, pasta with vegetables, rice salads, or stewed, boiled or baked white meat. It is also perfect with raw or marinated fish. |
