Vinification |
100% destemmed bunches, seven days of cold maceration, two "pigeage" a day at the start of the alcoholic fermentation, then pump-overs during maceration for a gentle extraction. |
Ageing |
20 months in French oak barrels, 30% new. No fining, no filtration. |
Pairing |
For the whole meal it goes well with rich dishes of filled pasta and all kinds of meat preparations. Ideal with braised venison in blueberry compote. |
