40 % whole bunch, short cold maceration, two "pigeage" a day at the start of the alcoholic fermentation, then pump-overs during maceration for a gentle extraction. |

30 % French new oak, light and long soft toast, from Tronçais and Allier forests. |

A generous and well-structured red, which requires equally important food such as preparations based on red meat and roasted or braised game. |
