||Once perfectly mature though with a hint of acidity, the Chardonnay and Pinot Noir grapes are vinified separately and fermented at approximately 18 °C. A part of the Chardonnay must is fermented and refined in small wooden barrels. In Spring a panel of expert tasters decides the cuvée of the millesimato.
||The wine is aged on the yeasts in the bottle for at least 36 months.
