||Rosè organic sparkling classic method brut
||The grapes, perfectly ripe, in a very short time from harvest, are put to cool and then de-stemmed.
||They are placed in tanks with the skins at a maximum temperature of 5 ° C for about 6-8 hours. This method is called cryomaceration or cold maceration and allows to extract a bit of color, which is different at each harvest, and allows to preserve the aroma of Pinot Noir grape. This is followed by a soft pressing and fermentation in steel tanks at a controlled temperature of about 18 °C.
||In spring, the cuvée is made and bottled for the froth. The basic wine used is only a vintage but comes from different vineyards. The wine is then left to mature on its own yeasts for a minimum period of 2 years.
||Aperitifs, fish and shellfish dishes are sublime accompanied with this wine.
