||The tradition of spumante in Umbria began only in the early 1980’s but careful selection of soils and microclimates aimed at finding the best conditions for producing grapes with good acidity has rewarded us with a product that rivals the more renowned spumante areas. The character endowed by the long, careful vinification makes it a highly sought-after spumante for aficionados.
||Classical Method: the production system is a long-term process, as it strictly follows all the canons of classical spumante production, with 30 months bottle fermentation and shaking by hand on pupitres for 40-45 days.
||The bottle then rests one month in the neck-down position before disgorgement and then 3 more months before release to the market.
||An excellent aperitif, it is also a great choice for continuing the entire meal.
