Medium-textured soil, looser in the high hills, with good structure and calcareous subsoil. |
Cultivation system |
Pruning: double spurred cordon. |
Harvest |
Sangiovese and Colorino harvested between late September and early October. |
Vinification |
Fermentation in steel at controlled temperature (26 °C) with maceration on the skins for 15 days. |
Ageing |
1 year in casks and one in bottles after light filtration. |
Pairing |
Florentine steak, barbecue with spicy sauce, sliced beef, roast beef with baked potatoes, stewed eel, aubergine caponata, spit-roasted chicken, slightly aged cheeses (pecorino, parmesan), traditional Bolognese lasagna, strangozzi with red onion and lingonberries, Köttbullar with lingonberries sauce, boiled meat. Due to its moderate body it is also excellent in the preparation of sauces. |
