Vinification Pressed by a pneumatic press for 2h30. Settling of the juice for one night. Alcoholic fermentation in 30 year old 28hl foudre. Fermentation for 3 weeks (at 17ºC on average - 22°C max.) using natural, indigenous yeasts. Chaptalises sometimes depending on vintages. Temperature is controlled. Malolactics completed.
Ageing 3 years in 30 year old 28hl foudre with regular ouillage (i.e. topped-up). No racking, no bâtonnage, no collage and light filtration by plates. Only one bottling per year.
