Harvest |
Harvest made entirely by hand in boxes, with cold maceration in a horizontal press for a period of eight hours and subsequent cleanup of must by decantation. |
Vinification |
The fermentation takes place in barriques of Allier at a controlled temperature of 14-16 °C. |
Ageing |
At the end of fermentation, the product is not racked and it is left to age in the same containers for about 8 months. At the end of this period the wine is definitively blended and then bottled and it is aged for a long time in bottle before being distributed. |
Pairing |
Pasta with seafood. Main dishes: fish with a good structure (grouper, swordfish, cod with tomato-based sauces or other flavorings), white meats, soft cheeses do not mature. Served at a higher temperature (16-17 degrees) and also excellent with lamb, roast kid, and grilled meats. |
