||The grapes are picked by hand.Red wine vinification, with maceration of the skins for around 10 days, and frequent, delicate pumping over. The fermentation takes place at a controlled temperature of 24 °C.

||Its characteristics are brought out by dishes of medium structure, such as pasta with meat, poultry, mushroom or truffle sauces, composite risottos, and pork or veal dishes with sauce.
