Vinification |
The ripest bunches are carefully selected in the vineyard, then direct pressing of the grapes without destemming follows, and only 50% of the must yield is used. Fermentation starts in stainless steel and ends in wood, in 300-hl French oak tonneaux, 30% of which are new and the remainder in second- or third-passage. |
Ageing |
After 10 months of ageing in wood, with 50% of spontaneous malolactic fermentation carried out, blending of wines and final bottling occur. After 2 years, the wine is marketed. |
