	Perlage Fine and persistent.
	Colour Straw yellow.
	Bouquet Elegant with fresh yeasty aromas. Fragrant and full-bodied, combining a fruity vein with tones of vanilla and brioche.
	Flavour Caressing effervescence, a nice acidic vein supporting an intense and soft fruitiness, with tropical notes of ripe exotic fruit. In the finish, it is satisfying and persistent.

Pairing

It is perfect as an apéritif, with fish and shellfish dishes, risottos and sweet pastries.

Vinification	Soft pressing of the must, fermentation in temperature-controlled stainless steel vats. The base wine is aged in French barriques for about 3 months and then bottled with prolonged contact on the yeasts, where the second, slow natural re-fermentation occurs.
Ageing	In the bottle, in contact with yeasts between 42 and 48 months.
