Bouquet

The richness of the aromatic trajectory, which takes off with blackberry aromas such as blackberry and blueberry, hovers centrally over sylvan scents of bramble and undergrowth before gliding at length over voluptuous balsamic and spicy scents, with fresh notes of mint and warm toasted notes.

Flavour

On the palate, this aromatic complexity is defined in tightly woven tannins, skilful in creating a dense yet silky texture, enveloping and deep in its chromatic-gustatory impression, where salinity and acidity make the taste pleasant, and the aromatic persistence enhances the drinkability.

Vinification The grapes of the three varieties, harvested when perfectly ripe, are vinified with separate fermentation of the musts at a controlled and variable temperature from 24 to 28°C. It then follows maceration on the skins to enhance their specific aromatic and structural characteristics.
Ageing Maturation in barriques takes place separately for the first 6 months, followed by a blending and subsequent maturation of the blend for a further 2 years in barriques. This is followed by bottling and ageing for at least 8 months before release.
