Vinification |
Alcoholic fermentation for 7-8 days in temperature-controlled rotary fermenters followed by malolactic fermentation in barriques. |
Ageing |
In medium toasted French oak barriques of second passage for 12 months. The wine is then transferred into steel tanks, where remains for 2 months before bottling, followed by a further 12 months in the bottle. The wine does not undergo filtration or clarification. |
