Vinification |
Alcoholic fermentation for 7-8 days in temperature-controlled rotary fermenters. Malolactic fermentation occurs in barriques. |
Ageing |
In 600-litre barrels of medium toasted French oak, 50% new and 50% of second passage, for 20 months. After ageing, the wine is transferred to steel tanks, where it remains for 3 months before bottling. |

Ideal with grilled meat, elaborate meat dishes and game. |
