Buvoli Metodo Classico Tre Brut
The Brut 'TRE CLASSICO' is the winery's youngest sparkling wine, suitable for the aperitif ritual or in combination with first courses. The winery wanted it very dry and acidic to match the structure, which - although apparently fresh - hints at its future ageing in the bottle. Here is the story about this wine told by Marco Buvoli: "I must tell the truth: initially I was reluctant to produce such a young bottle (for my standards): I love aged sparkling wines with great perlage, and 3 years on the lees seemed too short a time to be able to express the structure of my sparkling wine bases at their best. But I still decided to give it a try, with the promise to myself that 'If a Buvoli doesn't come out, I won't make it'". So much fear for nothing came to a Buvoli that was younger and more drinkable than the others but still recognisable - friends tell me - for its persistence and importance in the mouth. Bottling for the second fermentation typically takes place in the spring, assembling bases from several different vintages, some of which are old reserves aged in the wood. Then, after disgorging, it rests for a few more months before release to allow the liqueur de tirage to integrate.
