||The soil contains limestone, marl with prevalence of sands and silt that provide trace elements in the bouquet.
||After the manual harvest in the beginning of September, the vinification takes place in autoclaves and is aimed at preserving all the fragrances and aromas typical for the grape-highlighting the intense notes of fresh and candied fruit granted from the ground.
||Because of this, the must is chilled immediately and fermentation is then stopped to keep a part of sugar and again it interrupted, bringing the cold wine, with the aim of preserving all the fragrance and aromas of the grape, exalting the strong notes of fresh fruit and candied conferred by the soil.
