Vinification |
The must obtained from the soft and rapid pressing of the grapes is immediately refrigerated to stop fermentation and stored at -2°C. |
Ageing |
Fermentation takes place in autoclave at +20°C and continues when 5° of alcohol and 140 g/lt of residual sugar are reached. It is interrupted again, returning the wine to a cold temperature, to preserve all the fragrance and aromas typical of the vine, and enhance the distinct notes of fresh fruit and candied fruit conferred by the soil. |
