Harvest	By hand, at the end of September with 20 kg perforated crates. Grapes are both sorted in the vineyard and the wine factory.
Production technique	A very noble wine coming from the Côte de Nuits. The grapes are grown on old vines with specific cultivation techniques alongside controlled yields due to severe deforestation. Bunches are thinned if necessary, and soil is tilled with little or no use of fertilisers with environmentally friendly pest management.
Vinification	The grapes are destemmed but not crushed at the wine factory, then placed in tanks by gravity. Maceration lasts 23 days including one week of cold maceration at 12°C. Only indigenous yeasts are used for fermentation. The cap is not frequently punched.
Ageing	In barriques for 16-18 months, using a rather low proportion of new woods, less than 20%.
Allergens	Contains sulphites
Pairing	It pairs well with red meats, cold cuts and aged cheeses.
