||Maceration for 3 hours with whole bunches, pressing and defecation of the must for 3 hours in steel tanks. Spontaneous fermentation in stainless steel tanks and depending on the vintage for about 10% in used barriques (8-12 years) which can last from 2 to 7 months.
||Aging in the same containers on fine lees, without any racking, from 2 to 6 months.
