||Only the Flower (the first fraction of 30% of juice). was intended for Franciacorta "Parosé", which owes its slight color to the Pinot Noir that undergoes a slight maceration skin. The primary fermentation took place in small oak barrels (225 lt), which housed the wine for six months, until the following spring. Assembly and bottling with "draught syrup" precede stacking for re-fermentation in the bottle.
||The stacked bottles remain for a minimum of 36 months in the premises of our seventeenth-century cellars before the "remuage". Afterwards, the mushroom-shaped cork and the cage are put into the "Pas Dosé" and dosed. At least six months of further development is necessary before placing this Franciacorta on the market.
