||Very calcareous composition with moderate alkalinity and medium root depth exploration. The low water availability and the high surface stoniness create a unique condition for a very low but extremely high quality production.
||The grapes are harvested strictly by hand in small plastic crates and transported as quickly as possible to the winemaking cellar.
||Once in the cellar, the grapes are placed on a sorting belt before being crushed and destemmed. During this operation two or more people carry out a careful sorting operation, which further ensures the integrity of the product.
||After racking, malolactic fermentation takes place, followed by a careful selection of the best batches. Finally, the wine is aged for about 36-48 months in medium-sized and large barrels. After bottling, the wine rests further for at least 6 months in temperature-controlled environments.
||This wine is excellent with savoury first courses, such as risotto with mushrooms. It is also ideal with meat dishes such as grilled meats, roasts and game. It is also excellent with salami and medium-aged cheeses.
